our GIN process
1
Selecting the Finest Botanicals
The process begins with carefully sourcing juniper berries, citrus peels, herbs, and spices chosen to create the unique flavours of our gin and celebrate the local flora.
2
Infusing the Ingredients
The botanicals are steeped in pure water and neutral alcohol to release their natural flavors. This step allows the oils, aromas and characteristics of each ingredient to infuse fully into the base, creating the foundation for a complex and balanced spirit.
3
Distillation in the Copper Stills
The fermented liquid is heated in a still. Alcohol evaporates before water, and those vapors are then condensed into a stronger spirit.
4
Collecting the Heart
During distillation, we collect the «heart» of the run— the portion of the vapor that contains the purest and most flavorful alcohol.
5
Diluting to Perfection
The distilled spirit is blended with pure water to achieve the desired alcohol content and flavor balance.
6
Harmonizing
Before bottling, the gin is allowed to rest for a minimum of six weeks. This step allows the spirit to settle and balances its aromatic complexity.
7
Bottling & Labeling
Our gin is hand-bottled and labeled with care. Each bottle represents our commitment to capturing the spirit of Peru in distinctive, collectible designs.
